Successes:
- re-heatable. The white wine-lemon-butter-tarragon sauce stayed on its side of the plate and the tomatoes on the other, and microwaving didn’t kill the lettuce.
- I just really love tomatoes with basil.
- a lot more presentable than a lot of the other dinners I’ve come up with.
Questionable characteristics:
- the pork DID taste like chicken, didn’t it?
- maybe some bread or rice to soak up some tomato juices–since the pork-lettuce had its own sauce the tomato goodness was largely wasted.
- I should stop cooking tomato and romaine lettuce. Hmmm…
